snacks by Shira vol. 18: superfood trail mix
My fav corn-free superfood trail mix blend.
makes 6 servings
Ingredients
1 Tbsp goji berries
1 Tbsp unsweetened shredded coconut flakes
1 Tbsp cacao nibs
1 Tbsp pepitas
1/4 cup walnuts
1/4 cup sorghum grain (I’m into this kind)
1 Tbsp coconut oil
1 - 2 tsp ghee
1/2 tsp sea salt
Preparation
- Pop sorghum grains using this recipe.
- Once popped sorghum has cooled, place in a bowl with goji berries, coconut flakes, cocoa nibs, pepitas, walnuts, and remaining sea salt and mix until well combined.
- Optional: separate trail mix into 1/4 cup servings for on-the-go snacking.
- Enjoy!
