Ingredients

1 lb broccolini (about 4 bunches), stems trimmed
1 large leek, white and green parts, sliced
1 white onion, chopped
2 cloves garlic, chopped
4 cups chicken stock
1 cup full-fat coconut milk
3 Tbsp EVOO
2 Tbsp apple cider vinegar
sea salt
1/2 cup pine nuts

Preparation

  1. Pour oil into a large pot over medium heat. Add leaks, onions, broccolini, and garlic.
  2. Sauté until lightly golden. Add apple cider vinegar and stir well. Add chicken stock and coconut milk, cover and bring to simmer for 20-25 minutes.
  3. Place all contents in a food processor or high-speed blender with pine nuts. Blend until smooth.
  4. Season with salt and top with roasted pine nuts and rosemary as desired.
  5. Enjoy!
