snacks by Shira vol. 24: paleo broccolini soup
Ingredients
1 lb broccolini (about 4 bunches), stems trimmed
1 large leek, white and green parts, sliced
1 white onion, chopped
2 cloves garlic, chopped
4 cups chicken stock
1 cup full-fat coconut milk
3 Tbsp EVOO
2 Tbsp apple cider vinegar
sea salt
1/2 cup pine nuts

Preparation
- Pour oil into a large pot over medium heat. Add leaks, onions, broccolini, and garlic.
- Sauté until lightly golden. Add apple cider vinegar and stir well. Add chicken stock and coconut milk, cover and bring to simmer for 20-25 minutes.
- Place all contents in a food processor or high-speed blender with pine nuts. Blend until smooth.
- Season with salt and top with roasted pine nuts and rosemary as desired.
