snacks by Shira vol. 49: curly carrot salad with mustard vinaigrette
makes 2 salads
Ingredients
3 rainbow carrots, spiralized
1 cup mung bean sprouts
1 cup watercress
1/2 cup bell pepper, chopped
1 cup snap peas
mustard vinaigrette:
1/3 cup olive oil
2 Tbsp red wine vinegar
2 tsp dijon mustard
1 shallot, minced
1 sprig of rosemary
1 sprig of thyme
pinch of sea salt
pinch of black pepper
Preparation
- Mix dressing ingredients together until well combined.
- Compose salad, add dressing, and enjoy!
