snacks by Shira vol. 14: paleo chocolate peppermint patties

I'm a huge sucker for chocolate and mint. Hope you love these as much as I do.

makes 8-10 patties

Ingredients

for the mint

1 cup unsweetened shredded coconut
2 Tbsp coconut oil, melted
2 1/2 Tbsp honey
1/2 tsp matcha
1 tsp peppermint extract

for the chocolate

1/4 cup cocoa powder
1/4 cup coconut oil
1.5 - 2 Tbsp maple syrup
1/2 tsp vanilla extract
sea salt

Preparation

  1. Add all ingredients for the mint layer into a food processor or high-speed blender.
  2. Shape mixture into 2 inch patties. Freeze for 15 minutes or refrigerate for 30 minutes to help firm.
  3. Begin making the chocolate by heating the coconut oil in a sauce pan over low heat. Add in the cocoa powder, maple syrup, vanilla extract, and sea salt. Stir continuously for about 3 minutes, or until chocolate is smooth and fully combined. Remove from heat and let cool in fridge for 5 minutes so that chocolate has a thicker consistency.
  4. Coat the hardened peppermint patties with chocolate and set in freezer for 15 minutes before eating.
  5. Store in freezer.
  6. Enjoy!
