snacks by Shira vol. 11: energy bites
Ingredients
for the chocolate bites
1/2 cup pecans
10 medjool dates
2 Tbsp cacao powder
1 Tbsp almond butter
1 Tbsp coconut oil
1/4 tsp sea salt
for the lemon poppyseed bites
1/2 cup cashews
6 medjool dates
1 1/2 tsp poppy seeds
1 1/2 tsp maple syrup
1 tsp lemon zest
1/2 juiced lemon
1 Tbsp mucuna pruriens (or substitute with your favorite superfood powder)
Preparation
- Add all ingredients for each type of energy bite into a food processor or high-speed blender.
- Freeze mixture for 15 minutes or refrigerate for 30 minutes to help firm.
- Roll mixture into 2 inch circles and add favorite toppings as desired.
- Store in fridge.
- Enjoy!
