sea salt + vinegar sweet potato fries

One of my all time favorite paleo-friendly snacks just in time for the Super Bowl.

Ingredients

3 sweet potatoes, sliced into wedges
2 cups + 2 Tbsp white vinegar (keep separate)
1/2 cup water
sea salt
EVOO

Preparation

  1. Place wedges in a heat-safe bowl with tight fitting lid.
  2. Combine 2 cups vinegar, water and 2 tsp sea salt in a saucepan and boil on high until salt dissolves. Remove from heat and pour over wedges.
  3. Secure lid and store in the refrigerator for 2-4 hours.
  4. Preheat oven to 450° F. Drain potatoes and pat dry, and toss with olive oil and sea salt. Place wedges evenly on two parchment lined baking sheets and roast until golden brown and cooked through, about 35 minutes, flipping wedges halfway through to brown evenly.  Remove fries from oven and top with remaining vinegar.

Full disclosure: I'm only tuning in for halftime and commercials bc I give zero f&@#$ about ?? but recognize its widespread significance to many.
