makes 4 radicchio cups
Ingredients
4 radicchio leaves
1 cup bean sprouts
1 cup sauerkraut
1/2 cup beets, shredded
1 avocado, diced
1/4 cup chives, finely chopped
juice of 1/2 lemon
pinch of sea salt
pinch of black pepper
Preparation
- Assemble radicchio cups by dividing ingredients among each radicchio leaf.
- Top with lemon juice, sea salt, and black pepper.
