snacks by Shira vol. 59: paleo pad thai
makes 2 salads
Ingredients
1 head napa cabbage, thinly sliced
2 beets, spiralized
3 carrots, spiralized
2 persian cucumbers, diced
1 bell pepper, sliced
1 scallion, chopped
1/2 cup jicama, cut matchstick
1/4 cup cilantro, chopped|
1/4 cup raw cashews, chopped
zest of 1 lime
dressing:
juice of 2 limes
2 Tbsp fish sauce (I’m into this one)
zest of 1/2 lime
2 Tbsp brown rice vinegar
1 Tbsp hot chili oil
Preparation
- Mix dressing ingredients together until well combined.
- Compose salad, add dressing, and enjoy!
