Ingredients

1 cup raw cashews
8 medjool dates, pitted
2 Tbsp raw cacao powder
1 Tbsp unsweetened shredded coconut
1 Tbsp ground coffee beans
1 tsp cinnamon
1/2 tsp sea salt

toppings: unsweetened shredded coconut, cacao nibs, and raw cacao powder

Preparation

  1. Add all ingredients into a food processor or high-speed blender.
  2. Freeze mixture for 15 minutes or refrigerate for 30 minutes to help firm.
  3. Shape mixture into 1 inch circles and roll in shredded coconut, cacao nibs, or cacao powder.
  4. Store in fridge.
  5. Enjoy!

makes about 15-20 bites
