snacks by Shira vol. 41: paleo mocha truffles
Ingredients
1 cup raw cashews
8 medjool dates, pitted
2 Tbsp raw cacao powder
1 Tbsp unsweetened shredded coconut
1 Tbsp ground coffee beans
1 tsp cinnamon
1/2 tsp sea salt
toppings: unsweetened shredded coconut, cacao nibs, and raw cacao powder
Preparation
- Add all ingredients into a food processor or high-speed blender.
- Freeze mixture for 15 minutes or refrigerate for 30 minutes to help firm.
- Shape mixture into 1 inch circles and roll in shredded coconut, cacao nibs, or cacao powder.
- Store in fridge.
- Enjoy!
