paleo apple pie
I made aesthetically pleasing paleo apple pie because it’s #NationalApplePieDay, and I’m told that’s a thing? Who am I even? Regardless, I'm in love with this recipe and I hope you are too.
makes 4 small pie jars
Ingredients
for the dough
1 cup hazelnut flour (almond works too)
1 egg yolk
2 Tbsp maple syrup
1 Tbsp coconut oil
for the filling
4 medium apples (I used pink ladies), peeled and sliced into quarter wedges
2 Tbsp maple syrup
2 Tbsp coconut oil
3 tsp ground cinnamon
for the top
cashew cream (It's All Easy)
Preparation
- Preheat the oven to 350.
- For the dough: place the flour, coconut oil, egg yolk and maple syrup in a food processor and pulse until soft dough forms.
- Divide the dough into 4 balls and place in the freezer for 20 minutes.
- For the filling: heat the coconut oil in a large pan over medium heat. Add the apples and maple syrup and cook until the apples have softened (about 20 minutes). Add the cinnamon and cook for one more minute. Remove from the heat and set aside.
- Take the dough out of the freezer. Roll out the balls into 4 small circles (these will be the tops of your pies). Use the mouth of your jar to cut them into uniform circles. Fill 4 small (3/4 cup) wide-mouth jars 2/3 full with apple filling and top with dough circles.
- Bake for 20 minutes.
- Cool at room temperature. Serve with cashew cream if using.
