OITNB chocolate covered apricots

Orange is The New Black season 4 is dropping tonight and I pray that I can access enough self discipline not to binge the entire season like I did last year and, instead, savor them just as I advocate for savoring food. Here are some paleo-friendly chocolate covered apricots I made for the occasion because I have zero OITNB chill.

Ingredients

4 fresh apricots, sliced in half
2 oz unsweetened baking chocolate (100% cacao)
1 Tbsp maple syrup

toppings: unsweetened shredded coconut, pistachios, maldon sea salt

Preparation

  1. Place apricots on parchment paper and set aside (read: the below can get messy, so the parchment is there to prevent melted chocolate from sticking to your surfaces).
  2. In a thick saucepan or double broiler melt the chocolate over very low heat. Once melted, remove from heat, add maple syrup and stir until well combined.
  3. Carefully dip apricots halfway into the chocolate mixture and place on the parchment paper. Continue with remaining apricot slices.
  4. Sprinkle desired toppings on top.
  5. Enjoy!
