Snacks by Shira vol. 79: paleo romesco sauce
Ingredients
1 cup cashews
3 bell peppers
1/2 cup fresh basil
2 Tbsp red wine vinegar
1 clove garlic
1/2 tsp smoked paprika
EVOO
sea salt
Preparation
- Adjust oven rack 4 inches from broiler and preheat the oven to broil.
- Line a rimmed baking sheet with parchment paper. Slice bell peppers in half and remove seeds and stems. Season with olive oil and sea salt and arrange on the sheet with the skin facing up. Broil for 10 minutes. flipping once.
- Place the broiled peppers, cashews, basil, vinegar, garlic and paprika in a high-speed blender and pulse until well combined.
- Enjoy!
