snacks by Shira vol. 71: paleo plantain pizza
makes 1 medium-sized pizza
Ingredients
for the crust
2 ripe plantains
3 Tbsp olive oil
1 egg yolk
1/4 tsp baking soda
1/4 tsp onion powder
1/4 tsp garlic powder
pinch of sea salt
for the toppings
1/2 cup tomato sauce (no added sugar)
1/2 cup cherry tomatoes, sliced
1/2 cup cremini mushrooms, sliced
1/3 cup red onion, sliced
sprig of rosemary
sprig of thyme
fresh basil leaves
Preparation
- Preheat the oven to 375.
- Slice the plantains into chunks, then pulse in a food processor with egg yolk, olive oil, baking soda, onion powder, garlic powder, and sea salt, until even batter forms.
- Transfer the dough onto a parchment-lined baking sheet. Spread the mixture evenly into a large, fairly flat circle.
- Bake for 12-15 minutes, then once crust is starting to crisp, remove pizza from onion and add desired toppings. Bake for an additional 10-15 minutes.
- Top with fresh basil leaves.
