snacks by Shira vol. 50: paleo banana bread
makes two small loaves
Ingredients
2 very ripe bananas
2 Tbsp maple syrup
4 Tbsp coconut oil, melted
1/2 tsp vanilla extract
4 Tbsp water
1/2 cup hazelnut flour
1/2 cup coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1/2 tsp cinnamon
2 Tbsp psyllium husk (or 2 eggs)
1/2 cup chopped walnuts
Preparation
- Preheat oven to 350.
- In a bowl, combine together all of the wet ingredients with the bananas until mixture is even.
- In a separate bowl, mix together the dry ingredients. Fold the wet ingredients into the dry ingredients and mix until well combined.
- Transfer the mixture to a large loaf pan or two small loaf pans lined with parchment paper.
- Bake bread for 15-20 minutes, until golden brown on top.
