Ingredients

1/2 cup raw cashews

2 Tbsp coconut butter

7 Tbsp maple syrup

1 Tbsp mucuna pruriens (or unsweetened brown rice protein powder)

1 cup shredded coconut

1/4 tsp vanilla extract

1/4 tsp sea salt

additional shredded coconut for topping

Preparation
  1. Add all ingredients into a food processor or high-speed blender.
  2. Freeze mixture for 15 minutes or refrigerate for 30 minutes to help firm.
  3. Shape mixture into 2 inch circles and roll in shredded coconut.
  4. Store in fridge.
  5. Enjoy!
