Ingredients

2 cups shredded sweet potato, about 1-2 sweet potatoes

1 egg

1/2 Tbsp tapioca starch

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp paprika

pinch of sea salt

ghee

optional toppings: fried egg, chives, red pepper flakes, and sliced avocado

Preparation
  1. Preheat oven to 375.
  2. In a large bowl, toss together shredded sweet potato, egg, tapioca starch, garlic powder, onion powder, paprika, and sea salt.
  3. Melt ghee in a skillet over medium high heat. Place small batches of sweet potato mixture in skillet. Cook for 2-4 minutes on each side, flipping once.
  4. Place hash browns on a parchment lined baking sheet. Bake at 375 for 5-7 minutes.
  5. Serve with optional toppings.
  6. Enjoy!
