Orange is The New Black season 4 is dropping tonight and I pray that I can access enough self discipline not to binge the entire season like I did last year and, instead, savor them just as I advocate for savoring food. Here are some paleo-friendly chocolate covered apricots I made for the occasion because I have zero OITNB chill.
4 fresh apricots, sliced in half
2 oz unsweetened baking chocolate (100% cacao)
1 Tbsp maple syrup
toppings: unsweetened shredded coconut, pistachios, maldon sea salt
- Place apricots on parchment paper and set aside (read: the below can get messy, so the parchment is there to prevent melted chocolate from sticking to your surfaces).
- In a thick saucepan or double broiler melt the chocolate over very low heat. Once melted, remove from heat, add maple syrup and stir until well combined.
- Carefully dip apricots halfway into the chocolate mixture and place on the parchment paper. Continue with remaining apricot slices.
- Sprinkle desired toppings on top.
