1 cup raw cashews, soaked overnight or for at least 4 hours

1 Tbsp nutritional yeast

1 clove garlic

1 Tbsp apple cider vinegar

2 Tbsp water

juice of 1/2 lemon

pinch of sea salt

1 Tbsp scallion, chopped

  1. Drain and rinse the soaked cup of cashews.
  2. Add the cashews, nutritional yeast, garlic, apple cider vinegar, lemon juice, water, and sea salt to a high-speed blender and blend until smooth.
  3. Top with chopped scallions.
  4. Enjoy!

makes about 1 cup of cashew cream cheese
